Recipe Gluten-free and lactose-free Belgian Protein Waffles
The recipe yields approximately 4x protein Belgian waffles. They are really good and a little crispy, perfect to have as a snack or bid on your coffee! It is of course good to do regular waffles in a waffle iron plate, too, but we opted for a Belgian to get some extra volume. Protein Waffles are a protein-rich target because our version of powder contains the entire proten 48g per 100g.
0.5 cups of cornstarch (cornflour type)
0.75 dl Stay Good Proteinpancake & Waffle Mix Toffee or similar product. StayGoods variant follow this link: http://staygood.com/produkt/proteinpannkakor/
0.5 tsp baking soda
0.5 tsp salt
0.5 tablespoons coconut flakes (optional)
1 cup almond milk or regular milk if you have lactose intolerance
0.5 tbsp olive oil
How its done:
We have chosen to use a Belgian waffle iron so that we can get some airy waffles. Use olive oil to brush on or spray the waffle-iron. Easiest way is with a pump-spray for olive oil that can be purchased in most grocery stores. Stir together corn meal, protein powder and baking soda with salt and coconut. Pour in cold milk, eggs and oil, stirring occasionally. Whisk together properly! Bake in greased waffle iron. Beat the batter again before you add a new waffle. Serve with good accessories such as banana, strawberries, raspberries or blackberries, sugar-free chocolate syrup, sugar jam, whipped cream or coconut cream.
